Baked Spinach and Corn - Indo Italian style

BAKED SPINACH & CORN 

Note: This recipe is slightly updated from source(mentioned at bottom) to make it little Indo Italian and simple wrt ease of cooking/efforts required. However, the ingredients can be updated( add/delete) as per your liking. 


Serving Size: 2-3 people

Ingredients: 

1cup corn (boiled)

2 cups /1 bunch Spinach (boiled)  

2 tbsp olive Oil (any vegetable oil is good too)

1 tsp Cumin Seeds

1 Onion  cut - Maybe all finely cut or 1/2 finely cut and 1/2cut long

1/4 tsp Black Pepper

2-3 Tbsp Maida (All Purpose Flour)

2 cups Milk (1 cup warm + 1 cup cold should be ok)

1 Paneer (Cottage Cheese cube or crushed or homemade)

Salt, Oregano, Chilly Flakes

Ginger -  1 inch

Green Chilly -1

Cheese cubes -2

 

Recipe:

1. Take 2 Tbsp Oil in a Kadai and once little hot add ginger & green chilly to it. Stir it little bit for 20-30seconds and then add Cumin to it as well.

2. When the cumin seeds splutter, add onions,1/4tsp of Salt, some oregano & chilly flakes and stir fry over high heat for 2-3mins.

3. After that add 1/4tsp Black Pepper to the mix and stir fry for 30seconds. We are adding most seasoning early as its easy to stir them before adding spinach etc. Also it gives good flavor by getting roasted with onion

4. Now add boiled spinach and corn and mix it for 3min on medium heat till the spinach breaks up and spreads into the mix.

5. At this point add around 2.5 TBsp Maida and mix it well to make it a good bind. Now add 1 cup warm milk and mix till some sauce gets formed. After adding 1 cup milk more milk would be required at which time 1 cup cold milk can be added as well. Mix well , stirring continuously till sauce is blended. (Unlike typical white sauce shortcut here is mix and leave the set before adding more milk and then again stir).

6. Once sauce is blended, add another 1/4tsp-1/2tsp salt, some oregano & chilly flakes based on taste.  

7. Now one additional step we would do is add some crushed Paneer (we are using 1/2 block of paneer from market) and mix and turn off the Gas.

8. Now we are ready to bake.

9. Pre-heat an oven to 160C/325F and In an oven tray (greased) put the spinach corn mix . 

10. We don't want to use much cheese so we will be grating paneer first. Grate good amount of paneer on top first and then little bit cheese can be grated and put. The paneer gives a nice texture and color after baking which makes the dish more tasty when eating each bite.

11. Bake for 30min till its brown on top. Serve hot.
