Coffee Cake - Eggless

COFFEE CAKE (Eggless)

Serving Size: 5-6 people
 

Ingredients:

1/4 cup Vegetable Oil

1/4 cup Granulated Sugar - I like little less sweet. Can use 1/2 cup sugar if you like nice and sweet.

2 Tbsp Nescafe powder or any Instant Coffee

1 tsp Cocoa Powder (Optional)

1.25 cup warm milk (300 ml)

2 cup All purpose flour (maida) 

2 tsp Baking Powder


Recipe:

  • Coffee Liquid base preparation

    1. Found this nice technique in one video about using blender for making the liquid base of a cake and used that to make life easy. 

    2. In a blender jar add 1/4 cup oil, 1/4 - 1/2 cup sugar (can use 1/2-1cup powdered sugar as well), 2Tbsp Coffee powder,1 tsp cocoa (for additional taste if you like) and 1.25 cup warm milk and blend the mixture to get the coffee liquid base we will use.

    3. In a big bowl pour the coffee liquid base.

    Alternatively: If you dont have a blender then in a bowl take the oil, coffee,cocoa, sugar and milk and whisk it till everything gets mixed and then add the oil as well and whisk.

  • Cake batter Prep:

    1. To get the final batter- to the bowl with coffee liquid we will now add the flour and baking powder.

    2. Add 2 cup All purpose flour/maida by passing it through a sieve so that no granules go in and mixture is smooth.

    3. Similarly add 2 Tsp Baking powder by passing it through the sieve.

    4. Fold the batter slowly so that everything gets mixed and keep batter aside. (Feel free to taste the batter and ensure its tasty and sweet).

  • Baking of Cake

    1. For the last part, take any baking dish(circle/square/triangle- any shape) and first grease it.

    2. Optional Steps: After greasing sprinkle some powdered sugar(if available) to the sides of the dish and bottom. This will help make it easy to take out the cake and not stick.
    If you dont have powdered sugar then some all purpose flour can also be sprinkled.

    3. Pour the cake batter into the baking dish.

    4. Pre-heat the oven at 175 C for 7-8min and then place the baking dish in it.

    5. Bake for around 25minutes till cake is ready. 

    Test to see if cake is ready - Lightly press the top of the center of cake with your finger and see if it sort of stays pressed or becomes ok. If it stays pressed then it needs little more cooking. 

     

    Enjoy the cake as it is or with some ice cream!!!!!
